Does anyone know if a HP 5062-7079 Fast ADC board will work in a HP 8591A Spectrum Analyzer?

Hi Bob,
Yes it will...
The original FADC board for the 8591A was the 5062-1984, which was replaced by the 5062-7079 and it is fully backwards compatible.
Just drop it in and you should be good to go.
